Sure enough, I had found the Column Preferences but somehow not Edit Column
Details. Editing the column title makes them shrinkable! 

The columns in question were named things like "AMBR Uplink (Aggregate Maximum
Bit Rate for Uplink)" which made for quite a lot of wasted screen space.
Curiously, there seems to be a lot of extra space added beyond the visible
title text, but it seems to scale with the visible text (short column title =
very little extra space) so that might be a font scaling quirk. 

Renaming the columns seems like an extra step, that would be nice to avoid for
usability's sake. Other tabular UIs (Windows Explorer comes to mind) let you
shrink a column regardless of title length, and truncate it as needed. I'd love
this behavior in Wireshark, but it's low priority since the Edit Column Details
workaround exists. Agreed, wrapping would suck!
