The documentation is wrong.
"Edit->Capture Filters" and "Edit->Display Filters" are only for editing
your saved lists of capture filters or display filters.
A capture filter can't be *used* unless, well, you're doing a capture.
(It can't be applied to stuff you've already captured; that's what
display filters are for.) To set the filter for a capture, either type
it in the "Filter:" field of the dialog box popped up when you select
"Start" from the "Capture" menu, or click on the "Filter:" button in
that dialog box, select a filter, from the list of saved filters, and
click "OK". (There is no "Apply" button; as indicated, you don't apply
capture filters to existing captures, you just specify "use this filter
when I do this capture".)
To apply a display filter to an existing capture, either type it in the
"Filter:" field at the bottom of the screen and type the <Enter> key, or
click the "Filter:" button at the bottom of the screen, select the
filter (or construct it by typing it into the "Filter string:" field or
using the "Add Expression..." button) and click the "OK" or "Apply"
button.
