I guess the display filter list is already maintained and indeed
shows all supported protocols. Would it be an option to link to it
from the "About" page (http://www.wireshark.org/about.html)?

Maybe change it something like this:

o Decryption support for many protocols, including IPsec, ISAKMP, Kerberos, SSL/TLS, WEP, and WPA/WPA2
o Hundreds of protocols are supported, with more being added all the time (have a look <link to dfref>here</link> for a complete list)
o Coloring rules can be applied to the packet list, which eases analysis 

People might be able to find the complete list of supported protocols 
more easily that way. The amount of supported protocols *is* one of the 
major features of Wireshark :)
