how about applying a display filter and count how many messages you have and then divide by the number of elapsed seconds?
Its "hand made" but should give you a rough figure pretty quickly.

I know there is really no thing as a CPS in SIP, what I want to calculate is how many sip INVITE requests (and if possible only "new" invites, not re-invites) there are per second in a ethereal trace. If I cant get the value for each second, it is also ok with the same value each 10th seconds
 
Have googled on the net for such tool but failed to find one. Anyone here that that knows if it is possible to do what I want?
