Ah, I see. You we're thinking about RTP stream analysis. Maybe even retrieving
the image sent? That would be a novel extension to Wireshark.
Looking at RTP vs T.38, there are some notable differences. RTP is a very
simple (real time) data transport protocol. It relies totally on external means
to setup  the stream. T.38 on the other hand is a much more complex protocol.
Given, H.245 is used to open the channel, but T.38 is used to negotiate, setup
and tear down a FAX session and transport the FAX data.
So, RTP stream analysis looks at the simple protocol features and real time
aspects, while T.38 analysis would entail much more. 
Maybe you could work out the idea in more detail and add an entry on the
wishlist found on the Wiki. Someone looking for a project could sink his/her
teeth into it.
