I suggest to add an option on the context menu.

Like apply/prepare filter there would be a "colorize conversation ->" and in
the next layer a set of colors.
So you have the choice to colorize what you want.

In your scenario you have to mark every SIP stream seperately (and select a
different color) - but this would be more generic.
