Have you launched the X11 application before trying to run ethereal?
Ethereal uses it as the display and is not able to start it itself. So
you must start ity before.
If you are using the terminal you'll have to define the DISPLAY
environment variable
$ DISPLAY=:0.0
$ export DISPLAY
$ ethereal
Another (easier) choice would be adding ethereal to the applications
menu of X11.
In the X11 application go to the Applications menu and choose Customize...
then add an item to the menu
Name: ethereal (or something else if you prefer)
Command: exec /sw/bin/ethereal
and/or
Name: ethereal capture
Command: exec sudo /sw/bin/ethereal
