If I understand you correctly you want to capture voice packets. When I was training someone on this - here are the steps I used.
1. I picked an IP phone to trace . Example I have extension 2224 on my desk.
2. I found out what port that was going to on our switch
3. You have 2 choices
A. You can mirror the port and hook ethereal to the mirrored port.
B . disconnected the port and put a hub in between and hook your analyzer up.
4. I first wanted to show steps phone would go to to boot.
I started Ethereal and unplugged phone and caught a sniff of what was happening.
5. I started another trace and made a phone call. Captured that call
6. Went to statistics and looked for jitter or other impairments
To listen to actual voice traffic I don't believe ethereal does that. I could be wrong -it wouldn't be the first time nor would it be the last.
Is the reason for listening to listen for impairments?
What is the plan you have?
