I bought the book Ethereal Packet Sniffing to go over ethereal.

 The way I learned is going from the know to the unknown. I knew my ip
address and I started Ethereal and went to a web site. Stoped ethereal and
looked at what happened.
  My work is in voice/data integration. I hooked ethereal to the back of an
Ip phone and made at phone call. I had the trace of what happens with a
good call. 
 Usually the classes are costly. Most of the people I know get experience
through practice.
