As I have never run Ethereal as a service, and know next to nothing about running processes as services on Windows, if you ask only me, you're not going to get a helpful answer. (It's generally best to ask questions of ethereal-users or ethereal-dev, not of individuals on the list.)
I think I've seen this discussed on ethereal-users (or perhaps ethereal-dev), so I'm forwarding the question on to the list, in case somebody else has an answer for you.
