As a more convenient workaround (especially when you suffer the enormous
device strings that Windows provides) you could manually edit the ethereal
"preferences" file to force Ethereal to use eth1

My "preferences" file contains the rather ugly line:
# Default capture device
capture.device: Intel(R) PRO Adapter:
\Device\NPF_{C0BD2FFE-AB2B-4F7E-B9A7-25B6B232EA29}

So does this help:
# Default capture device
capture.device: eth1
