When capturing packets, Ethereal supports what libpcap/WinPcap supports. 
What libpcap supports is what the underlying OS's packet capture
mechanism and network drivers support; what WinPcap supports is what the
NDIS code in the OS, the WinPcap driver, and the network driver support.

The capture mechanism in all OSes on which libpcap runs supports
capturing on Ethernet, and NDIS+the WinPcap driver on Windows supports
capturing on Ethernet.  Neither of them care what speed the Ethernet
runs at; they'll support all speeds.

So it's a question of what the driver for the NIC supports; most drivers
for gigabit NICs probably support capture.
