However, I do not see "Packet length (bytes)" in
Edit|Preferences|Column|Column Format list.

Well, I decided that the easiest way to figure that out would be to
select "Preferences" from the "Edit" menu, select "Columns", and
explicitly add a "Packet length (bytes)" column, and then save the
preferences.

The answer, from that, is "%L".
