I'm not sure you'd want to use Ethereal for that; there are many
different reasons to monitor a network.  It doesn't have much to help
you to draw bandwidth graphs - it's more of a protocol analyzer, for
looking at details of packets, than a traffic monitor.

ntop might be more appropriate for what you're trying to do:

Or ttt might also be good for this application:
