It's not just a display - you can disable or enable dissectors using the
buttons on that dialog box.

This can come in handy if, for example, some protocol happens to be
using a port number that's assigned to some other protocol, and that
protocol has an Ethereal dissector.  This might happen with ONC
RPC-based protocols; I have a capture where lock manager traffic happens
to use port 646, which means Ethereal, by default, dissects it as LDP,
rather than as NLM.  Disabling the LDP dissector clears that problem up.
