In sufficiently recent versions of Ethereal (I don't remember where I
added that - 0.6.3 or 0.7.0), after typing in the filter, type <Return>
or <Enter> to apply the filter.

In older versions, you have to use "File/Reload" (control-R) to apply
the filter.
