The purpose of "-G" is to dump out various tables in Ethereal as input in scripts, to put into the ethereal-filter man page, various Web pages, etc.. I.e., it's not to show the information directly to humans, it's to pipe to another program, so it's not written to the terminal and a console isn't interesting.
Tethereal generates the same information, and it's a command-line program, so its output can be more easily piped to other programs.
