No. If you want, you can use the same ett value for *all* subtrees in a dissector. That'd mean that if you opened up any tree, and then selected another packet for the same protocol - or selected another packet and selected the original packet, all subtrees would be displayed as open, so that's probably not the best choice. You don't have to use an ett value for each subtree, however - you'd probably just do it for each *type* of subtree.
