Only checked this on win32 (specifically Win2K), although I suspect it's
similar on other platforms:

If you have a capture open, select a protocol from the protocol tree (middle
window), right-click and select "Protocol Properties", you get a window with
the properties of the *next* protocol (i.e., if you select ssh you'll get
ssl, if you select ssl you'll get tacacs+, just to see what would happen, I
told it to take a conversation I had and decode as XOT (last protocol in the
properties section), and I got the Printing properties (first item in the
properties window), so it seems to wrap...)
