WildPacket's Etherpeek NX does a decend job of building post-capture graphs (and one of the only commercial products that I've seen that will do it). Certainly nowhere near as powerful as IOStat in Ethereal, I like their graphing mechanism, and ability to export data directly to CSV from the GUI.
However, the versions I've worked with have been quite buggy, not sure if any of it has been fixed since the initial release of NX 2.0...
