That's because new-style plugins - which both the Gryphon and MGCP
plugins are - aren't shown in that menu.

Go to the "Edit->Protocols" menu item; if it shows "gryphon" and "mgcp"
in the list of protocols in the "Decoding" tab, it's loaded the Gryphon
and MGCP dissectors.
