That's what "~guy/src/cmd/ethereal/ethereal" is for :-) (Except that I've
moved the hacks to wire those ports in to the side, so that I can check
in "packet-tcp.c" changes without having to avoid checking that change
in.)

Then again, maybe those are HTTP traffic most of the time, as I think
those are the ports Harvest used, and I think Squid also follows in
Harvest's footsteps there, as we do, so maybe I should just bite the
bullet and check my changes in to CVS.

Yes, and the ability to change that on the fly.  This has been discussed
(I think Gilbert proposed, a month or so ago, changes to the way
dissectors figure out what dissector gets called next, that could
provide some infrastructure to help this out), but hasn't been done yet.
