It's done that since at least Ethereal 0.6.1 (which I downloaded and
tried it on) - when you start a capture, it creates a brand new
temporary file, with a somewhat randomly-chosen name.

The preference item suggested earlier, letting you specify what
directory to use for the capture file, is probably the right way to
handle that.
