Hey Grant-

I would take it that you have a router which allows you to run Wireshark or capture network data that you can later view using Wireshark?

I run captures every now and then to sort issues with our HTTP proxies so I've had to learn how the HTTP protocol functions.

Although I won't go into detail, I think that the Wireshark HTTP wiki can help you achive what you are looking for.
